Ayurveda describes various types of prepared foods (Kritanna Varga) with their properties, preparation methods, and health benefits.
Preparations of Rice and Grains (Manda, Peya, Vilepi, Odana)
These are progressively thicker preparations of rice or other grains cooked in water.
Manda :- Thin fluid drained immediately after boiling. And Easiest to digest.
Peya :- Slightly thicker than Manda but still liquid. And Easy to digest.
Vilepi :- More solid grain and less fluid. And Moderate digestibility.
Odana :- Fully solid, no fluid portion. And Comparatively harder to digest.
Manda (Thin Fluid) :-
1. Best among preparations.
2. Promotes easy movement of faeces and flatus.
3. Relieves thirst and exhaustion.
4. Nullifies residual doshas (ideal after Panchakarma).
5. Improves digestion and restores normalcy of tissues.
6. Softens channels and induces perspiration.
7. Kindles digestive activity.
Peya (More Liquid, Less Solid) :-
1. Relieves hunger, thirst, exhaustion, and debility.
2. Useful in abdominal disorders and fevers.
3. Aids easy elimination of faeces.
4. Kindles appetite and helps digestion.
5. Suitable for all.
Vilepi (Less Liquid, More Solid) :-
1. Retains fluids within the body.
2. Good for the heart and relieves thirst.
3. Kindles appetite and is ideal for all.
4. Beneficial for ulcers, eye diseases, and post-Panchakarma individuals.
5. Suitable for those weakened or given fats during Snehana therapy.
Odana (Solid) :-
1. Prepared from well-washed grains with complete water evaporation.
2. When prepared with medicinal decoctions or fried grains, it becomes easy to digest.
3. When prepared with milk, meat, or similar heavy ingredients, it is harder to digest.
Soups and Liquid Preparations :-
Mamsa Rasa (Meat Soup) :-
1. Nourishing (Brihmana).
2. Satisfying (Preenana).
3. Aphrodisiac (Vrushya).
4. Beneficial for vision (Chakshushya).
5. Heals ulcers and wounds (Vranaha).
Mudga Supa (Green Gram Soup):
1. Good for health.
2. Recommended after Panchakarma.
3. Beneficial in ulcers, throat, and eye diseases.
Kulattha Supa (Horse Gram Soup):
1. Normalizes Vata (Vatanulomi).
2. Useful in abdominal tumor (Gulma), tuni, and pratituni (groin pains).
Preparations to Avoid or Use with Caution :-
*Harmful or Heavy Foods :-
1. Tila (Sesamum) preparations.
2. Pinyaka (residue after oil extraction from sesame, groundnut, etc.)
3. Dried leafy vegetables.
4. Germinated grains.
5. Shandaki Vataka (fried rice balls).
Effects :-
Not good for eyes.
Increase doshas.
Cause debility.
Hard to digest.
Pinyaka Effects :-
Causes giddiness, dryness, and indigestion.
Vitiates vision.
Specific Food Preparations :-
Rasala :-
(Curds churned and mixed with pepper powder and sugar)
1. Increases body weight.
2. Aphrodisiac and unctuous.
3. Improves strength and taste.
Panaka (Vegetable/Fruit Juice) :-
1. Relieves exhaustion, hunger, thirst, and fatigue.
2. Provides satisfaction but is generally hard to digest.
3. Stays long in the stomach, diuretic, and good for the heart.
4. Properties depend on the material used.
Laja (Fried Paddy) :-
1. Relieves thirst, vomiting, diarrhea, diabetes, obesity.
2. Mitigates kapha, cough, and pitta.
3. Increases appetite and is easy to digest.
4. Cold in potency.
Prithuka (Parboiled and Flaked Paddy) :-
1. Hard to digest but strengthening.
2. Increases kapha and causes constipation.
Dhana (Fried Barley and Other Grains) :-
1. Stays long in the stomach and causes indigestion.
2. Dry, satisfying but hard to digest.
Saktu (Corn Flour) :-
1. Easy to digest, relieves hunger, thirst, fatigue, eye diseases, and wounds.
2. Nutritious and gives instant strength when taken as a drink.
3. Should not be eaten:
- Without water.
- Twice in a day.
- At night or after meals.
- In excess quantity.
Vesavara (Spiced Meat or Vegetable Preparation)
Meat Vesavara :-
Meat cut into small bits, spiced with pepper and ginger, roasted or fried.
Vegetable Vesavara :-
- Prepared with flour or pulses, spiced and fried.
- Properties:
- Hard to digest.
- Unctuous and body-building.
- Increases strength.
- Properties depend on the material used.
